Before getting involved in cooking, Giorgos Samoilis was a molecular biologist and a professor at the university. He completely changed his life’s direction to find balance, and in 2013, he and his partner opened “Ω3” in Platys Gialos in Sifnos island, which became famous in Hollywood after its discovery by Tom Hanks.
In 2020, he opened the award-winning restaurant “Cantina” in Sifnos, featuring a locavore cuisine of flavourful concepts with a zero food waste philosophy that captivates, and in 2023, he opened “Pelicanos” restaurant. He is also a consultant at the raw food restaurant “Rho” in the DAIOS COVE Resort in Crete and at Tainaron Blue Retreat in Mani. In the winter, he lives in Minas Gerais, Brazil ∙ he loves the country’s exotic fruits, ceviche, and aguachile. He admires the pioneering “Silo” restaurant in London for its No Food Waste policy, which doesn’t even have a trash can. The rest of the year, he lives and works in Greece.
